Jerusalem artichoke

Jerusalem artichoke is different from the other summer yellow flowers because the plant produces an edible tuber. I learned that from reading Stalking the Wild Asparagus soon after we moved here in 1970. I tried eating it and almost all the other plants and animals described in the book. My conclusion was that I liked the concept of eating wild foods but the reality was that they were more trouble than they were worth.
